[formal] last craze but one

Hi,

I'd like to ask you about the following sentence: "landscape gardening has become his last craze but one".
I understand that it means that landscape gardening is his very last activity he has found.

What I'd like to ask is this: is it possible to use "my last [...] but one" for more words than just craze ?
Is it correct / does it make sense if I write: this has become my last pastime but one / this is my last idea but one / the last trend but one ==> very last pastime / idea / trend ???

I think it sounds strange and probably it can't be used in another context but I wanted to hear your thoughts on this one.

No, "last but one" means second last, i.e. he has now found a new craze to replace landscape gardening. For your meaning, one would say "... has become
