The second one somehow sounds redundant, since baking includes duration and temperature. "While baking" means for the duration. I"m not sure exactly what bothers me about your sentences. "Process" seems too technical (trust me, I know baking can be extremely technical) but here it seems like "the process of washing the dishes/taking a shower." (I know both are possible.)
