For me/to me

1. I'm talking to friends and telling them my feelings toward my family, could I begin the sentence with:

For me, I know my grandparents love me, etc....

To me, I know my grandparents love me, etc....

2. Is there a difference between:

Honestly, it doesn't really matter for me. And Honest, it doesn't really matter to me.

I've read all the past posts on this matter and still don't really have an exact idea with these prepositions.
