Can I write "for God sakes," or does it have to be 'for God's sake?"

The expression is "for ***'s sake". In colloquial use, it can be any way you want, though. I have heard "for *** sakes" plenty of times, and that would be fine in dialogue if you wanted your character to say that for some reason.
