For a cooking blog, please correct syntax and grammar.

I like the way you've made the pasta, not too firm not to soggy.
Always keep in mind that pasta still cooks once out of the hot water and in the sieve. Rise the pasta with cold water for it to stop cooking or else your pasta will be overcooked and too soft.

Once - doesn't seem to semantically flow, or make sense. I think "even" is a better choice, Also "and " is not neces
