what's the difference between food stand and food cart, and which term is used in BrE? I've run across some other names like food truck, kebab van or roach coach, but I don't know which term is really used these days.

A "stand" would be static, while a "cart" would be mobile (wheeled). A "van" is bigger than a "cart", and also always self-propelled (whereas a car could be pushed), while a "truck" is bigger still. g.
