Hello,
Can we say:
- A blanket of fog covered the town.
- A blanket of fog encompassed the town.
- A thick fog covered/encompassed the town.

Can we also use encompass and cover in collocation with "mist"?
Do they all sound natural?

Encompass is usually used, in my experience, when talking about scope. I couldn't say that it was wrong or odd to use it in your context here.
