So is there a rule when one should use the or that when refer to a particular thing (part of the thing)? 'I want that phone'. I can't use 'the' here without changing the meaning of the sentence. So why can't I use 'that part of it'? It is based on the same logic that I'm talking about that thing and not another.
Thank you!

You can. In this particular sentence, the definite article seemed to be more natural than the demonstrative.
