FISH AND CATTLE

Hi,
How do we know if we are referring to one fish/cattle or more than one in a situation where it has the modifier 'this'?

This fish/cattle is mine.

I think we are referring to several pieces of equipment when saying this:

This equipment is his.

Cattle is always plural, so you have to say "These cattle are mine"
Fish is singular or plural. You can say This fish is mine. These fish are mine.
