''firm'' taste

I'm looking for a word, probably an adjective describing the taste or better yet, the texture of a sausage. It basically means that when you taste it or bite it it is firm but in a good way, not too firm. Sorry for not being precise enough, I don't know how to describe it.

The only suggestion I can think to offer is 'robust'. This is often used to describe flavours that are strong, but not over-powering. I'm not sure how well it applies to textures though.

Thanks Nick. I think the word I am looking for should not refer to the flavour but to the texture of the product.
