Find to do ?

Finding the patrons to be very guidable,the waiter steered them to the most expensive items on the menu.

In this sentence, can I just say it in another way--> Finding the patrons that are very guidable, the waiter steered them to the most expensive items on the menu.

Why should I say find to do, I mean "find something to do " does it mean the thing you have discovered?

And for the first sentence, I think you might like this revision:

"The waiter found the patrons to be very guidable, so he steered them toward the most expensive items on the menu."
