Find /juice up my Thanksgiving lunch

Can you please explain what does it mean "to find somewhere off the freeway"? does it mean to find a place? what is to "juice up" here?

and another question is "spot" is hotel?

I thought it'd be nice to find somewhere off the freeway,
amongst nature, a beautiful spot here in Arkansas and...
juice up my Thanksgiving lunch... which has no turkey in it by the way.

"somewhere off the freeway" means a place that is not on the main road, that can be reached by turning off the main road. I do not know specifically what "juice up" means here. Generally speaking, it can mean to make something more exciting/interesting.

Palabrawhat is to "juice up" here?

To add juice to the meal. Later in the script (Fat, Sick, and Nearly Dead) it's described as a green vegetable juice.
