Hi,

"The best time slots for the math exam fill up quickly."

"You should enrol in the exam as soon as possible. The spots/places fill up within the first two days."

"The doctor's office has filled (up) its capacity."

Are these correct?

"The best time slots for the math exam fill up quickly." This is correct English. Whether the meaning is correct depends on how the exam is organized.

Same comment as above. in addition, I would say sign up for rather than enrol in.
