Few of them would say

(a) Few of them would say that they are satisfies with their salaries.
(b) Few of them would say that they were satisfied with their salaries.

I think (a) is more natural, but are there any cases in which people choose (b), thinking that it is the second conditional?

The first is incorrect. You can think of 'satisfied' as an adjective or 'are satisfied' as a passive construction. Either way, 'satisfies' does not work.
