FEED OFF / FROM CONNECTED /USES

Can you please help me word these sentences properly?

1 When I turn the faucet from cold to hot, before I get to the center (KNOB) the water is already almost boiling hot. I can only imagine how hot it would be if I turned it all the way up. (or, to the maximum, to the max, up to full heat, or whatever.)

Theoretically speaking

2 In the kitchen it seems there is an unlimited supply/amount of hot water and when taking a shower there is only 10 minutes worth of hot water. Is it because the hot tank is only connected to the shower and not the kitchen faucet. (Can you use "connected"?)
Some old houses have a limited amount of hot water because it comes from a tank, newer places have an unlimited amount because the water comes from X that continuously heats water. (x being "i don't know what)

What I'm trying to say, and I know it's not possible, is that the shower is connected and feeding off the water tank that gives a limited amount of water whereas the kitchen faucet gives you an unlimited amount because it feeds off/from X that continuously heats water giving you an unlimited amount of water.
(Can you use "feed off/from"?)

[That is ok, or maybe a little better "turned it all the way on"] (or, to the maximum, to the max, up to full heat, or whatever.)
