Favorite or favorites?

I made a statement, "We had some family photos taken, this is one of my favorite."
I had someone correct me that it should have been "favorites." I contend that because I was referring to a single photo, it would be singular "favorite" as I was referring to "one of my favorite photos." He said because I left off the word "photos" at the end of the sentence it would revert to plural "favorites." Who is correct?

I'm curious why dropping the word photos would cause the word favorite to change from singular to plural? Is there another example you can think of that would cause a similar change? I'm trying to understand why it would change. Thanks to both of you for responding!

Because 'favorite' becomes a noun (a pronoun) instead of an adjective and acquires number.

It's not a very productive transformation in English, but there are a few examples.
