I agree that they are very similar in meaning and can be used (most of the time) interchangeably.
"Fast" connotes speed and "quick" does as well. Yet, "quick" gives the impression of doing something in a short time: Some children are particularly quick learners. He was always quick to point out her faults.
Europe's and Japan's bullet trains travel at at speeds well over 375 kph. T
