expensive restaurant

My business partner wants me to book a table at a expensive restaurant for him and he gave me the name of the restaurant but he did not tell me what he wants to eat.
Could you please check if the following sounds natural and polite for an answer used in a business letter ?
For reserving a table of the restaurant,
it is also required to pre-order a specific set of dishes in advance.
because they only serve sets that come with several courses.
May I ask you which course menu you would like to order?
They can also arrange a set depending on your budget.

You need to learn how to winnow out the chaff, moguwai.

To reserve a table at the restaurant, you need to order in advance, because they only serve sets of several courses. They can also arrange a set to match your budget. May I ask how much you would like to pay per person and which course menu you would like to order?

@grammarfreak Thank you very much for your answer. Yes, that may be cultural. Expensive restaurants in Japan only serve sets of several courses like French and Italian restaurants.(eg. appetizer, soup, meat, fish and followed by a dessert.)
They have usually some options with different prices (Low to High). Ordering a specific course menu is required in advance.

eg
Set 1: USD 50
