I like to exercise or I like to do exercises. Unless you only like to do one exercise.

In which case, it would be "I like to do an exercise".

If you like to work out, i.e. jogging, swimming, bicycling, weight-lifting and so on, you'd say " I like to excercise. (no do)
If you have a particular excercise in mind, you can say " Let's do a neck /wrist excercise together ..." (in this case "do excercise .." is ok)
