After a meal of turkey sandwiches, crumpets, trifle, and Christmas cake, everyone felt too full and sleepy to do much before bed except sit and watch Percy chase Fred and George all over Gryffindor tower because they'd stolen his prefect badge.

Does the sentence need ‘they’ before sit, as ‘except’ is a conjunction, doesn’t it?

No, not at all. It would be wrong if it did: They did nothing except (=but) sit.

I get the very basic one today as well. A coordinate conjunctive can connect even verbs. Thank you very much.
