Evidenced/demonstrated/illustrated

Hi,

Question1:
Should I use evidenced, demonstrated or illustrated?
Question2:
Should I use so or that?

Sentence:

As evidenced/demonstrated/illustrated by my academic track record, I have a good knowledge of chemisty and biology. In recognition of so/that, I was selected to help students in the chemistry class at my university and to mark exam paper.

Thanks
