Here's how I see it.

The basic idea is 'all the time since something happened'.


eg Ever since I moved to Canada, I have lived in Montreal.

The starting event is that I moved.


eg "Ever since I can remember, I have lived in Montreal."

The starting event is that I became old enough to remember things.

That is almost an idiomatic expression because "since" is nonsense in the context, taken literally. It means "as far back as my recollection extends" with more than a hint of hyperbole.
