ESPECIALLY SINCE / WHEN

Which would you say?
- Especially since/when you said you'd be here at 9am, its not nice keeping people waiting.
(can you give me examples with ESPECIALLY WHEN & SINCE please?)

And which would you say here?
- The house is bright/is lit.
- The older she gets the prettier she is/gets.
- Dry your hands with/using the towel.
