Erasing all the 'that' in my work

Hello teachers,

I'm writing a piece of work with a small word count, so I'm struggling to find ways to fit in as much information as possible. I thought that maybe its possible to erase all 'that' in my sentences to free up some words for other ideas, as I THINK my sentences still make sense without 'that'. But is this grammatically correct?

You can't erase demonstrative 'that', for example: That is what I believe would become Is what I believe . You can't erase relative 'that' if it's a subject, for example: He's the guy that paid me would become He's the guy paid me .
