Actually, I think there is more to the difference than that, TT.

He is an English-speaking Korean.
He is a beer-drinking man.
They are fun-loving folks.
It is a man-eating tiger.

All those adjectives apply to qualities that the noun (Korean, man, folks, tiger) possesses; it is things that they do. It is an active sort of modification.
