"I guess (that) we didn't have anything else to do." is acceptable, grammatically - past tense.
"I guess (that) we don't have anything else to do." is also acceptable - present tense.
The word "that" can be inserted to make it more formal.

don't = do not. It's present tense.
didn't = did not. It's past tense.
