Ellipsis usage

Hi Folks,

How do you normally use an ellipsis in a dialogue? I'll give an example:

'Hey,' John began slowly. 'I love you ...'

Jill was taken aback. 'What?'

'Like a sister.'


John starts with 'I love you' but completes it with 'like a sister' after Jill interjects. In such cases, do we have to start the last line with an ellipsis? Instead of 'Like a sister', should it be '... like a sister'?
