Either , neither

Hi

Q1)

regarding the following examples:

1- he didn't remember, neither did I

2- the struggle did not end, nor was it any less diminished

can we switch between nor and neither in these examples , if yes then this means we can switch between neither and nor in introducing a negative statement , right? if so which is formal and which is informal?

note: i know that we can't switch between them in a sentence like:i like neither cats nor dogs - and in a sentence like:neither sides of the brain are dominant

in using either or neither + of

like in these examples:

-Neither of them is interested in your project

-Either of you has broken my coffee cups

-Either of these rooms will serve me as a study

-Neither of my sisters is abroad

do we must talk about just two things,persons or about 2 or more things,persons using either or neither + of?
