Eeny meeny miny moe

Hello,

Wikipedia tells me that "Eeny meeny miny moe" is called a counting rhyme, or counting-out rhyme.

In a situation where you would like to volunteer for it, would you say I'll do the counting, or I'll do the counting-out, or something else? – Similarly, describing someone, would you say He's doing the counting/counting-out or something else?
