Edge or edges of the piece?

Hi. Let's say a child is making a rolled-up sandwich with a piece of white bread. In order to come up with a nice roll, he decides to tear the edge (edges?) of the bread piece, which is brown in color, out and use only the middle part. Now, his mother wants him to save the edge (edges?) of the piece of the bread. Should she tell him to save the edge or edges of the bread piece? Thank you in advance for your help.
