''Rice has been processed for easy cooking.''
Does easy here mean literally easy or does it also mean fast?

Well, rice is pretty easy to cook anyway, so I would assume they mean fast. You can buy 'quick cook' riced as well.

I think it means "easy", because rice is easy - unless, like me, you forget it and end up with charcoal.Emotion: embarrassed

Not to worry. If there's at least a little something edible in the finished product, just serve it as "(charcoal) rice pilaf"!

My golden rule of cooking is very simple: serve everyone copious amounts of alcohol prior to the meal, and they think that whatever is served is wonderful. Of course, if you don't drink alcohol, you have to learn to be a good cook.
