Below which is right? Which is wrong?

Everyone has a book, don't they?

Class, get your book by yourselves.

Everyone helps themselves to the snacks.

It gets a bit awkward. If you use singular - as you'd expect with '---one' / 'each' then you have to use 'him' or 'her' when you aren't aware of the actual gender. It seems to be accepted to use the plural in these instances.
