Is it a mistake to use past continuous with 'during'?

During the flight, James did some paper work and spoke (speak) to the woman sitting next to him, while they were (be) speaking (speak) the flight attendant brought (bring) breakfast. When the plane landed (land) in London, it was almost 11 o'clock.
