Dumpling skin

What's the word referring to the thing wrapping the 'inner things' of a dumpling?

-Don't buy dumplings before going to the barber's. Otherwise when you put the dumplings in room temperature, and when the dumplings begin to defrost, the ___ would stick to each other. Later when you take them from the fridge to cook them, you would have to break them apart, making them crushed and fragmented.

By the way, what are those 'inner things' called in English?

A dumpling doesn't have a skin. It is basically a ball of dough, often wrapped around something.
