I don't really like the insertion of to, because "to drink" doesn't parallel the form of the first verb in the sentence. Maybe that's just me, though.

I would only say #1. #3 sounds very unnatural to me, wrong even.

Then you can omit it! I do.

Nevertheless, the rule about echoing "do" with another verb is to use the infinitive with or without "to".
If echoing "doing", however, the -ing form is used.
