Dress out

As far as I know, to dress a fish or to dress it out means to prepare it for consumption. E.Hemingway in his book wrote "How would you like to see me bring one in that dressed out over a thousand pounds"
Could someone explain me the phrase in bold? How can a fish dress out something?

It means that after all the inedible parts were removed from the fish, and the fish was cleaned, the remaining flesh weighed more than 1000 pounds. The normal way we write today is "the fish dressed out at 1000 pounds"
