Doubts: "to greet" and "what's up" ?

Hello guys Emotion: smile I've got 2 doubts and I hope you'll help me

1) Is there a way to say s.o. that s.o. else is saying hello to him?

For example I know some expressions like:
"Say hello to your brother for me"

Is it right?
Is there another informal and common expression? On the dictionary I found "to greet". Is it often used?

2) One day I recieved an email from an English speaker.. the first line said "Hey, what's up?"
I'd never heard from him before, so I think it could mean "How are you" or something like that.. could someone please explain me the meaning of this expression?

Are there other sentences meaning "How are you" ?
Is "How are you doing" correct in this case?

Thanks [K]
