Double T

I know that -able is a common English suffix, so why do we use -table in "(un)forgettable"?

Most words of more than one syllable which have the stress on the second syllable and end in a consonant double their last letter before adding the suffix. The suffix hasn't changed, it's the doubling "rule" that's been applied.
