Double quotes usage

I had an error and had today printed as today in a letter I had sent earlier. I would be grateful if somebody could please let me know if the sentences below are correct. Also, should I use double quotes for both today and toady?

"I also would like to offer my apology for an error in the last letter you had received from us. We had printed toady instead of today."

Thanks!

I would also like to offer my apology for an error in the last letter we sent you: we printed 'toady' instead of 'today'.
