why do we use double letters in words such as `need´ or ´grammar´and what does it to how we pronounce the word?

Generally speaking, we do not double consonants in English pronunciation. Little, better, lesser, assume, grammar, middle, fellow, terrific, copper - all these words are written with a double consonant, but we pronounce them as if they were only one.

There are times when words have been joined, thus giving us two consonants that we pronounce as double, but it's more like a full stop b
