A sister of George's is coming to stay with us. (double genitive)
A sister of George is coming to stay with us.

Both sentences are correct grammatically.

Excuse me, but it is not "the correct form". Both forms are correct. Take, for example:
a) A picture of my father, and
b) A picture of my father's.

These both obviously say very different things, and both are correct in different circumstances.

A picture of my father's. - one picture from many pictures

A picture of my father's. - one picture from many pictures-- No. A picture which my father possesses.

The first is better. When you say someone's name it is much more natural to use the possessive 's.

Second one is not natural, but essentially also correct.

Other possibilities:

George's sister is coming (this implies George has one sister).

One of George's sisters is coming (this implies George has more than one sister).

"A sister of George's is coming"
