I'm assuming you meant to write 'they':

1.They don't mind our taking somebody with us.

2.They don't mind taking somebody with us.

In #1, 'our' signifies that the 'taking' is the act of 'we', i.e. of the speaker.

It means: 'they have no objection to the fact that we are taking somebody with us'.

Whereas #2, without 'our', means: 'they have no objection to taking somebody with us'.

In #1, the agent of the 'taking' is specified ('our taking', thus 'we'). In #2, the agent of the taking is unspecified.

Extra bit:

For #2, you could have a scenario like this:

'Hello, Mr and Mrs X. I hear you're going on holiday with Mr and Mrs Y this year.'
'That's right. MrP is coming, too.'
'MrP? That dreadful fellow who writes improbable dialogues on English Forums?'
'The same.'
'And are Mr and Mrs Y happy about that?'
'Oh, they don't mind taking somebody with us.'

i.e. we don't know who invited MrP.
