I understand that "don't match" means that if you have different symptoms (then the ones these remedies are normally used for) then you should try different remedies?

It seems to me that "if these don't match" refers to symptoms just like "matches" in the sentence above. I didn't mention that but the doctor enumerated different symptoms as well, like for example:
It wasn't clear to me in your original post that you meant .. . . . don't match your symptoms. It's an unusual enough thing to say that you'll have to make that clear.
