A: No blue, green, yellow doh(play doh). You used them all yester.

Can I use "them" to refer the several colorful doh?

Thank you

There’s no blue, green, or yellow doh (left). You used them/it all yesterday. I think I would use it , but them works too.

If there is a small chunk of doh, would you say "a piece of doh"?
Also there are three different colors of doh, Would you say " mix them all" or Mix it all" ?
