Does except = but

Is this changeable and idiomatic?

  • The whole of the island is flat but here.
  • Everyone was sleeping but him.
  • I got a look at everything but her eyes.

Hi, 'But' is fine here. Note that it often sounds rather literary and emphatic when you use it like this. 'Except' is much more common.
