Do you say cheers to one single person?

Especially when you wanna console someon who's depressed?

Would it sound anything weird to you if one says "cheers, chivalry!"? (just making an example here though...)

It is usually said when two or more people are having an alcoholic drink, It is a way of celebrating the fact that we are all well and are enjoying the drink. I really don't think it can be used to console someone at all

You can say "Cheer up!" to mean that

I would suggest that you use "want to" in writing, even if you pronounce it as "wanna" when speaking. "Wanna" will not give people a good impression of your writing skill or your seriousness as a student of English.

I'm not sure why "chivalry" is in your example. What you do mean by it?

CHEERS is something related to a celebration, you can say that to a person especially when you are celebrating victories and happiness...
