Do I need to pluralize the word effect in my sentence?

An evaluation of the effects of coffee on young adults.

or

An evaluation of the effect of coffee on young adults.

I noticed that when I looked up scholarly articles related to this topic, some used effect and others used effects. Which one is more formal?

Thanks!

It depends on what you wish to emphasize: that there is an overall effect or a number of specific effects that you are going to discuss.
