Vocabulary

diverge, eclective

Do we say that prices are eclectic? Reading the definition http://vocabulary-vocabulary.com/dictionary/eclectic.php I get the impression we use this word for one thing that has several elements, like my taste, a (one) mix can be eclectic. Prices are several things that may be divergent or varied or ... How do you see this thing?

Do we say that prices for one thing are variable to mean they vary according to store and proximity to the city centre?

Yes, variable (and now I retract 'erratic' if that is your meaning). Or better yet is what you wrote: they vary (with the outlet and its location).
