disparity, inconsistency or discrepency?

There is some disparity/inconsistency/discrepency between the real language people use and the language which dictionaries depict.

All 3 are possible choices. 'Discrepancy' is not very good here because we usually use it as a countable noun. 'Discrepancies' will sound better.
