He was earning much more than me.

The first one is past simple which is used for the action which is finished in the past, while the second one is past progressive and indicate the duration in the past.

He earned much more than me (for doing that particular job that took three hours to do).

He earned much more than me (in total during that period of time in the past).

He was earning much more than me (on each paycheck we received during that period of time in the past).
